- 1 cup onion, finely diced (150g)
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 can crushed tomatoes (14.5 oz / 411g)
- 1 cup beef broth (240ml)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon sugar
- 1 package cheese tortellini (9 oz / 255g)
- 1/2 cup heavy cream or mascarpone cheese (120ml)
- Salt and black pepper (to taste)
- Fresh parsley (chopped for garnish)
Instructions
- Brown the ground beef in olive oil over medium-high heat, then add onions and garlic until soft.
- Stir in spices, crushed tomatoes, and broth; simmer covered for 10 minutes.
- Add uncooked tortellini to the sauce and simmer until pasta is tender and liquid reduces.
- Remove from heat and stir in cream or mascarpone until smooth.
- Season to taste and serve topped with fresh parsley.
