Ingredients

  • 12 large flour tortillas
  • 1 pound ground beef
  • 1 can (15 ounces) black beans (rinsed and drained)
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup diced tomatoes
  • 2 green onions (sliced)
  • 1 packet taco seasoning
  • 1 tablespoon olive oil
  • Salt (to taste)
  • black pepper (to taste)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin. Press tortillas into the cups to form shells.
  2. Brown ground beef in a skillet with olive oil. Drain fat and stir in taco seasoning and water.
  3. Add black beans, diced tomatoes, half the cheese, and half the green onions to the beef. Mix well.
  4. Fill tortilla cups with the beef mixture and top with remaining cheese.
  5. Bake for 12-15 minutes until cheese is melted and tortilla edges are golden. Cool for 5 minutes before removing.
  6. Garnish with remaining green onions and sour cream before serving.
