Description

A savory beef exterior wrapped around a molten core of sharp cheddar and sweet roasted peppers.


Ingredients

  • 1.5 lbs ground beef (80/20 blend)
  • 1 cup breadcrumbs
  • 1 large egg
  • 1/2 cup whole milk
  • 1 medium yellow onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 medium red bell pepper (seeded and finely diced)
  • 1 medium green bell pepper (seeded and cut into 1/4-inch strips)
  • 8 oz sharp cheddar cheese (cut into 4 equal sticks)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1/3 cup ketchup (for glaze) (1 tablespoon brown sugar, 1 teaspoon apple cider vinegar)

Instructions

  1. Preheat oven to 375°F. Sauté onions and red peppers until soft.
  2. Mix meat with all ingredients except green peppers and cheese.
  3. Form meat into a rectangle, place cheese and green peppers in center, and roll up.
  4. Bake for 45 minutes, add glaze, and bake 15-20 minutes more until 160°F.
  5. Rest for 10 minutes before slicing.
