A flavorful stir-fry featuring thinly sliced pork loin, garlic, and ginger, served over rice.
Ingredients

- 1 pound pork loin or tenderloin, sliced thin
- 3 tablespoons vegetable oil (divided)
- 6 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/3 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 1/4 cup water
- 1 medium red onion, cut into wedges
- 1/2 teaspoon black pepper
- 1 teaspoon toasted sesame oil
- cooked white rice (for serving)
Instructions
- Slice pork against the grain and marinate with oil, 1 tbsp soy sauce, and 1 tsp cornstarch.
- Whisk remaining soy sauce, brown sugar, vinegar, cornstarch, water, and pepper to make sauce.
- Sear pork in hot oil in batches until browned, then remove from pan.
- Stir-fry garlic, ginger, and red onion until fragrant and softened.
- Return pork to pan, add sauce, and toss until sauce thickens and coats ingredients.
- Drizzle with sesame oil and serve immediately over rice.
