Instructions
- Wash and cube the potatoes into uniform 1-inch pieces, then place them in the slow cooker.
- Melt the butter and whisk in the minced garlic, salt, pepper, and thyme; pour over the potatoes.
- Toss to coat, cover, and cook on LOW for 4 to 5 hours until tender.
- Check doneness with a fork; if needed, cook longer in 30-minute increments.
- Stir in fresh parsley, let rest for 5 minutes, and serve warm.
