- 1.5 lbs boneless skinless chicken breasts or thighs
- 1 10.75 oz can condensed cream of chicken soup
- 1 10.75 oz can condensed cream of mushroom soup
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 8 oz wide egg noodles
- 2 cups low-sodium chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese (optional)
- Salt (to taste)
Instructions
- Place raw chicken in slow cooker, add soups, broth, and seasonings; stir to combine.
- Break noodles in half, scatter on top, add frozen vegetables, and gently submerge noodles.
- Cover and cook on Low for 3 to 4 hours until noodles are tender and chicken is cooked.
- Shred chicken in pot, check consistency, add broth if too thick, and season to taste.
- Top with cheese if using, melt on Warm setting, rest 5 minutes, and serve.
