  • 1 fresh pineapple (chopped into 1” pieces)
  • 3 bell peppers (any color, cut into 1 1/4-inch pieces)
  • 1 red onion (cut into 1-inch chunks)
  • Olive oil
  • 1 teaspoon cornstarch
  • 1/3 cup red apple vinegar
  • 1/4 cup canned pineapple juice
  • 1/4 cup sugar
  • 1/4 cup honey
  • 2 tablespoons ketchup
  • 1 tablespoon reduced sodium soy sauce
  • 1 teaspoon salt
  • 1/2 tsp EACH garlic powder, ginger powder
  • 1/4 teaspoon red pepper flakes

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a mixing bowl, whisk together marinade ingredients. Reserve 1/4 cup of the mixture and combine with shrimp in a bag or bowl; marinate for 30 minutes.
  3. In another bowl, coat vegetables with remaining marinade and olive oil.
  4. Assemble the skewers by alternating shrimp and vegetables.
  5. Grill or bake for about 5 minutes until shrimp are cooked through.
