- 1 red onion (cut into 1-inch chunks)
- Olive oil
- 1 teaspoon cornstarch
- 1/3 cup red apple vinegar
- 1/4 cup canned pineapple juice
- 1/4 cup sugar
- 1/4 cup honey
- 2 tablespoons ketchup
- 1 tablespoon reduced sodium soy sauce
- 1 teaspoon salt
- 1/2 tsp EACH garlic powder, ginger powder
- 1/4 teaspoon red pepper flakes
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a mixing bowl, whisk together marinade ingredients. Reserve 1/4 cup of the mixture and combine with shrimp in a bag or bowl; marinate for 30 minutes.
- In another bowl, coat vegetables with remaining marinade and olive oil.
- Assemble the skewers by alternating shrimp and vegetables.
