  • 4 cups diced potatoes
  • 1 cup red bell peppers
  • 6 large eggs

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with foil or parchment paper and grease lightly.
  2. Combine diced potatoes, red bell peppers, and ground beef on the sheet. Drizzle with olive oil and season with half the salt and pepper. Toss to coat and spread into a single layer.
  3. Roast for 20 minutes, stirring halfway through, until potatoes are partially tender and beef is browned.
  4. While roasting, whisk eggs, milk, remaining salt, and pepper in a bowl until frothy.
