  • 4 large yellow or white onions
  • 6 cloves fresh garlic (peeled)
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon dried rosemary needles (crushed)
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a 9×13-inch baking dish with foil.
  2. Peel onions, trim tops, and leave roots intact; place cut-side up in the pan.
  3. Mix garlic, oil, thyme, rosemary, salt, and pepper in a small bowl.
  4. Pour mixture over onions, tuck garlic around them, and cover tightly with foil.
  5. Roast covered for 45 minutes, then uncover and roast 15-20 minutes until tender and browned.
  6. Let rest for 5 minutes before serving with pan juices.
