  • 1 large Italian or French bread loaf (about 24 inches)
  • 1 tablespoon olive oil
  • 1 medium green bell pepper (diced small)
  • 1 medium yellow onion (diced small)
  • 1 pound lean ground beef (85/15 blend)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 2 cups shredded Provolone cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Prepare the bread loaf by slicing the top off and scooping out the inside, reserving the crumbs. Toast the shells lightly.
  2. Sauté diced green peppers and onions in olive oil until soft and slightly browned.
  3. Cook ground beef in the same skillet until browned, then season with garlic powder, oregano, salt, and pepper.
  4. Combine vegetables, beef, marinara sauce, and reserved bread crumbs in the skillet; simmer briefly.
  5. Stuff the beef mixture into the bread shell, top with Provolone cheese, and bake at 375°F for 15-20 minutes.
  6. Sprinkle with Parmesan, rest for 5 minutes, then slice and serve.
