Instructions

  1.   3. Use a thin, flexible spatula to gently flip the fillets, reduce the heat to medium, and cook the second side for another 3 to 4 minutes until the internal temperature reaches 125°F to 130°F for medium-rare or 135°F for medium; transfer the cooked salmon to a warm plate and cover loosely with foil while you prepare the sauce.
  4. Without cleaning the pan, reduce the heat to low, add the cold unsalted butter, and immediately stir in the minced garlic for 30 to 60 seconds until fragrant but pale yellow; pour in the fresh lemon juice to deglaze the pan, let the mixture bubble gently for one minute, slowly whisk in the heavy cream to create a smooth emulsion, and stir in the optional capers if using.
