Description
A classic no-bake cherry cheesecake with a buttery graham cracker crust and a silky cream cheese filling topped with sweet-tart cherries.

- 2 cups graham cracker crumbs ((approx. 14 standard whole sheets))
- 3 tablespoons granulated sugar
- 1/8 teaspoon fine sea salt
- 6 tablespoons unsalted butter (melted and cooled slightly)
- 16 ounces full-fat brick cream cheese (softened to room temperature)
- 3/4 cup powdered sugar (sifted)
- 1/2 cup full-fat sour cream (room temperature)
- 1 tablespoon freshly squeezed lemon juice
- 1 1/2 teaspoons pure vanilla extract
- 1 cup heavy whipping cream ((minimum 36% milkfat), very cold)
- 1 can prepared cherry pie filling ((21 ounces / 595g), chilled)
- 1/4 teaspoon pure almond extract (for cherry topping)
- fresh mint leaves (for garnish)
Instructions
- Lightly coat the base and sides of a 9-inch springform pan with nonstick spray or butter. Line the base with a trimmed round of parchment paper.
- Whisk together the graham cracker crumbs, granulated sugar, and salt in a medium bowl. Pour in the melted butter and stir until uniformly saturated. Press into the prepared pan and freeze for 15 minutes.
- Pour the cold heavy cream into a chilled mixing bowl and beat on medium-high speed until stiff peaks form. Set aside in the refrigerator.
- In a separate bowl, beat the room-temperature cream cheese until smooth. Add sifted powdered sugar, sour cream, lemon juice, and vanilla extract. Beat until fluffy.
- Fold in one-third of the whipped cream into the cream cheese mixture, then fold in the remaining whipped cream until no streaks remain.
- Scrape the filling over the crust and smooth the top. Chill for at least 6 hours before serving.
