Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix eggs, buttermilk, melted butter, lemon zest, and lemon juice until smooth.
- Fold in the blueberries gently into the wet mixture.
- Combine wet and dry ingredients by pouring the wet mixture into the dry one and stirring until just combined.
- Pour batter into the prepared loaf pan and bake for 55–60 minutes or until golden brown and a toothpick comes out clean.
- Let cool in the pan for about 10 minutes before transferring to a wire rack.
