- 4–5 teaspoons sea salt
- 400 g crushed tomatoes
- 2 cloves garlic
- 225 g bocconcini cheese
- Fresh basil for garnish
Instructions
- Preheat the oven to 200 degrees C (390 F).
- Slice the eggplants into 2 cm thick rounds and layer them in a colander with salt. Allow them to drain for 40 minutes to reduce bitterness.
- Rinse and pat dry the eggplant slices, then brush with olive oil and arrange on a baking tray.
- Bake for 20 minutes, flipping halfway through until tender.
- In a saucepan, heat olive oil over medium heat and sauté garlic until fragrant. Add crushed tomatoes and seasonings; simmer for about 10-15 minutes.
- Top each eggplant slice with sauce and sliced bocconcini; bake for an additional 15-18 minutes until cheese is golden.
- Garnish with fresh basil before serving.
