  • 400 g crushed tomatoes
  • 2 cloves garlic
  • 225 g bocconcini cheese
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 200 degrees C (390 F).
  2. Slice the eggplants into 2 cm thick rounds and layer them in a colander with salt. Allow them to drain for 40 minutes to reduce bitterness.
  3. Rinse and pat dry the eggplant slices, then brush with olive oil and arrange on a baking tray.
  4. Bake for 20 minutes, flipping halfway through until tender.
  5. In a saucepan, heat olive oil over medium heat and sauté garlic until fragrant. Add crushed tomatoes and seasonings; simmer for about 10-15 minutes.
  6. Top each eggplant slice with sauce and sliced bocconcini; bake for an additional 15-18 minutes until cheese is golden.
  7. Garnish with fresh basil before serving.
