Ingredients

  • 1 lb lobster tails, meat removed and chopped
  • 4 cups seafood or vegetable broth, kept warm
  • ½ cup dry white wine
  • 1 ½ cups Arborio rice
  • 3 tbsp unsalted butter (divided)
  • 2 tbsp olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup fresh basil leaves, packed and chopped
  • Salt (to taste)
  • freshly ground black pepper (to taste)
  • Parmesan cheese (for serving (optional))

Instructions

  1. Prepare lobster meat and keep broth warm.
  2. Sear lobster in butter and oil until opaque, then set aside.
  3. Sauté onion and garlic in remaining fat until soft.
  4. Toast rice in the pan, then deglaze with wine.
  5. Add warm broth ladle by ladle, stirring constantly until rice is al dente.
  6. Return lobster to pan, finish with butter and basil.
  7. Season and serve immediately.
