Juicy koftas made from ground lamb or beef, served in a rich tomato and pepper sauce.
Ingredients

- 1 ½ pounds ground lamb or beef
- 1 large yellow onion (finely grated and squeezed dry)
- 3 cloves garlic (minced)
- ¼ cup fresh flat-leaf parsley (chopped)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon ground cinnamon
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
- 4 large ripe tomatoes (peeled, seeded, and chopped)
- 2 green bell peppers (cored, seeded, and sliced)
- 1 cup chicken or vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon sugar (optional)
Instructions
- Mix meat, onion, garlic, herbs, and spices; chill for 30 minutes.
- Shape meat into oval koftas and chill again briefly.
- Sear koftas in hot oil until browned on all sides; remove from pan.
- Sauté tomatoes, peppers, and tomato paste; deglaze with broth.
- Return koftas to pan, cover, and simmer for 20-25 minutes until cooked through.
- Rest for 5 minutes before serving.
