- 3 cups raspberries
- 1 teaspoon xanthan gum or 2 teaspoons arrowroot powder
- 1/3 cup + 1/4 cup sugar-free sweetener, divided
- 1 teaspoon vanilla extract
- 1 1/2 cup almond flour
- 1/4 cup golden monk fruit
- 1/4 cup walnuts
- 1/4 cup pecans
- 2 tablespoons hemp hearts
- pinch salt
- 3/4 cup unsalted butter, cold & cut into cubes
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, mix raspberries, xanthan gum (or arrowroot powder), 1/3 cup sugar-free sweetener, and vanilla extract until combined.
- In a food processor, pulse together almond flour, remaining sugar-free sweetener, golden monk fruit, walnuts, pecans, hemp hearts, and salt. Add cold butter cubes and pulse until crumbly.
- Spread the raspberry mixture evenly in a square baking dish and top with the crumble mixture.
