- 2 cups old-fashioned rolled oats
- 1/2 cup baking soda
- 1/4 teaspoon salt
- 1/2 cup creamy peanut butter
- 1/3 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup pumpkin seeds (pepitas)
- 1/2 cup chopped nuts (walnuts or pecans)
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup dried cranberries
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, beat peanut butter, honey, egg, and vanilla until smooth.
- Stir in baking soda and salt until combined.
- Fold in oats, then mix in pumpkin seeds, nuts, chocolate chips, and cranberries.
- Scoop dough onto the pan, spacing 2 inches apart, and flatten slightly.
- Bake for 10-12 minutes until edges are golden but centers look soft.
- Cool on the pan for 5 minutes, then transfer to a wire rack.
