- 1 medium head cabbage (about 2 pounds, cored and chopped)
- 3 large carrots (peeled and sliced)
- 3 stalks celery (diced)
- 1 large yellow onion (finely diced)
- 4 cloves garlic (minced)
- 1 can diced tomatoes (14.5 ounces, undrained)
- 6 cups beef broth
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- salt (to taste)

Instructions
- Brown the ground beef in a large pot with olive oil, then remove and set aside.
- Sauté onions, carrots, and celery in the same pot until softened, then add garlic and tomato paste.
- Add beef broth, scraping the bottom of the pot, and bring to a simmer with herbs and seasonings.
- Return the beef to the pot, add the cabbage, cover partially, and simmer for 20-25 minutes.
- Adjust seasoning and serve hot.
