  • 2 cups shredded sweetened coconut
  • 3/4 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. In a small bowl, combine chopped bittersweet chocolate with boiling water; stir until smooth.
  3. In a mixing bowl, whisk together flour, cocoa powder, espresso powder, baking soda, and salt.
  4. In another bowl, mix sugars with buttermilk, vegetable oil, eggs, and vanilla until combined.
  5. Gradually incorporate dry ingredients into wet mixture; add melted chocolate until blended.
  6. Pour batter evenly into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  7. For the frosting: melt butter and mix with evaporated milk; combine with cornstarch mixture until thickened.
