- 4 pieces boneless skinless chicken breasts (about 6 ounces each)
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 1 teaspoon dried rosemary (crumbled)
- 1 teaspoon dried thyme leaves
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 2 tablespoons fresh parsley (chopped)
- 1 tablespoon lemon juice
Instructions
- Pat chicken dry, season with salt and pepper, and pound to even thickness.
- Sear chicken in olive oil over medium-high heat until golden brown and cooked through.
- Remove chicken, reduce heat to low, melt butter, and toast garlic and dried herbs.
- Add lemon juice, scrape up browned bits, and simmer sauce briefly.
- Return chicken to pan, top with sauce and fresh parsley, and rest for 5 minutes.
