- 1 clove garlic, minced
- 1 teaspoon lemon juice
- Salt and pepper, to taste
- 8 small flour or corn tortillas
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- Fresh parsley or cilantro, chopped
- Optional: crumbled feta cheese
- 2 tablespoons fresh parsley, finely chopped
Instructions
- In a large bowl, combine olive oil, minced garlic, lemon juice, oregano, smoked paprika, cumin, salt, and pepper. Add chicken thighs and toss to coat. Marinate for at least 30 minutes.
- For the tzatziki sauce, drain grated cucumber and mix with Greek yogurt, dill, minced garlic, lemon juice, salt, and pepper in a small bowl; refrigerate until serving.
- Preheat grill pan or outdoor grill to medium-high heat. Grill marinated chicken for about 5-6 minutes per side until cooked through (165°F internal temperature).
