- 1 cup cherry tomatoes (halved)
- ½ cup cucumber (diced)
- ¼ red onion (thinly sliced)
- ¼ cup kalamata olives (pitted and halved)
- 2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- ¼ teaspoon dried oregano
- Salt and pepper to taste
- 4 large flour tortillas or pita breads
- ½ cup crumbled feta cheese
- Fresh spinach or romaine lettuce leaves
Instructions
- Grate and drain the cucumber, mix it with yogurt and seasonings, and whisk the oil and vinegar for the salad.
- Toss tomatoes, cucumber, onion, and olives with half the dressing.
- In a skillet over medium-high heat, break the beef into crumbles, add spices, and brown until crispy and fully cooked.
- Warm the tortillas in a dry pan until pliable and slightly toasted.
- Spread tzatziki on the tortilla, add greens, beef, salad, and feta, then roll tightly.
