Ingredients

  • 2 cups shredded carrots

  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cups fresh baby spinach leaves
  • 1 tablespoon lemon juice
  • ½ cup heavy cream or coconut milk (optional)

Instructions

  1. Sauté the Aromatics and Carrots in olive oil until soft, then add garlic.
  2. Add broth, thyme, salt, and pepper; simmer for 10 minutes.
  3. Puree half the beans with broth and return to pot for thickness.
  4. Simmer again, then stir in spinach until wilted.
  5. Finish with lemon juice and optional cream; serve hot.
