- 4 cups corn kernels
- 3 tablespoons unsalted butter
- 1 medium yellow onion (finely diced)
- 2 cloves garlic (minced)
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 2 green onions (sliced thinly)
Instructions
- Melt butter in a large skillet over medium heat. Add diced onion and cook until translucent, about 5 minutes.
- Add minced garlic and Cajun seasoning. Stir constantly for 30-60 seconds until fragrant.
- Add corn kernels and cook for 3-4 minutes, tossing to coat and lightly sear.
- Pour in heavy cream and smoked paprika. Reduce heat to medium-low and simmer for 5-7 minutes until sauce thickens.
- Season with salt and pepper to taste. Remove from heat and stir in half of the green onions. Garnish with remaining onions before serving.
