  • 2 cups cooked shredded chicken
  • 1 cup shredded cheddar cheese
  • 6 slices crispy Turkey Bacon, chopped
  • 1/2 cup sour cream
  • Salt and pepper to taste

  • 2 tablespoons fresh parsley, finely chopped (optional)

Instructions

  2. Wash the russet potatoes thoroughly and prick each one several times with a fork. Bake directly on the oven rack for 50-60 minutes until tender.

  4. In the bowl, combine the scooped potato flesh with shredded chicken, sour cream, half of the cheddar cheese, salt, and pepper. Mix until well combined.
  5. Spoon the filling back into each potato shell, topping with remaining cheddar cheese and chopped Turkey Bacon.
  6. Return to the oven for another 10-15 minutes until cheese is melted and golden brown.
