- 4 pieces boneless skinless chicken breasts (about 6 ounces each)
- 3 large yellow onions
- 3 tablespoons unsalted butter (divided)
- 1 tablespoon olive oil
- 2 cloves garlic (minced)
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
- Salt and freshly ground black pepper
- 1 cup shredded Swiss cheese (or Gruyère)
- 2 tablespoons fresh parsley (chopped)
Instructions
- Pat chicken dry and pound to uniform thickness. Slice onions thinly. Melt 1.5 tbsp butter in a skillet over medium-low heat, add onions and salt, and cook for 25-30 minutes until deeply golden. Add garlic and thyme, cook 1 minute, then set aside.
- Preheat oven to 400°F. Season chicken with salt and pepper. Heat remaining butter and olive oil in the skillet over medium-high heat. Sear chicken 4-5 minutes per side until golden brown.
- Transfer chicken to a baking sheet or keep in oven-safe skillet. Top with caramelized onions and shredded cheese. Bake for 8-12 minutes until cheese is melted and chicken reaches 165°F internally.
- Let chicken rest for 5 minutes. Sprinkle with fresh parsley.
- Plate immediately and serve with desired sides.
