  • 2 cups panko breadcrumbs

  • 1 teaspoon dried thyme

  • 1.5 cups Arborio rice
  • 4 cups chicken broth (kept warm in a separate saucepan)
  • 0.5 cup dry white wine
  • 1 small yellow onion (finely diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons unsalted butter (divided)
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh chives (chopped)
  • Microgreens (for garnish (optional))
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil

Instructions

  1. Pound chicken breasts flat, layer with ham and cheese, and roll tightly. Secure with toothpicks.
  2. Set up a breading station with seasoned flour, beaten eggs, and seasoned panko breadcrumbs. Coat the chicken rolls.
  3. Pan-fry the chicken in oil and butter until golden brown and cooked through (165°F). Rest for 10 minutes.
  4. Sauté onion and garlic, toast the rice, deglaze with wine, and gradually add warm broth while stirring until creamy.
  5. Finish risotto with butter and Parmesan. Slice chicken and serve over the risotto with chives and microgreens.
