Description
A deeply satisfying side dish or low-carb main course featuring roasted cabbage wedges topped with melted cheese and crispy turkey bacon.

- 1 medium head green cabbage (about 2 to 2.5 pounds, trimmed and cut into 4 thick wedges with core intact)
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 6 slices turkey bacon (about 6 ounces, diced into 1/4-inch pieces)
- 1 teaspoon neutral cooking oil
- 1 cup shredded sharp cheddar cheese (4 ounces)
- 1/2 cup shredded low-moisture mozzarella cheese (2 ounces)
- 2 tablespoons finely minced fresh chives
Instructions
- Preheat the oven to 400°F (200°C) with a rack in the center position. Line a large rimmed baking sheet with parchment paper.
- Remove loose outer cabbage leaves. Cut the head in half through the core, then cut each half in half again through the core to create 4 equal wedges (boats). Keep the core attached to hold leaves together.
- Place wedges on the prepared baking sheet with at least 2 inches between them. In a small bowl, mix olive oil, kosher salt, black pepper, garlic powder, and smoked paprika. Brush evenly over all exposed surfaces of the cabbage.
- Roast at 400°F (200°C) for 25 to 28 minutes until edges are caramelized and a paring knife pierces the core with gentle resistance.
- While cabbage roasts, heat 1 teaspoon neutral oil in a 10-inch skillet over medium heat. Add diced turkey bacon and cook, stirring frequently, for 6 to 8 minutes until crisp and browned. Transfer to a paper towel-lined plate to drain.
- Remove cabbage from oven. Toss shredded cheddar and mozzarella together, then pile evenly across the top of each wedge. Scatter the crisped turkey bacon over the cheese.
- Return to the oven for 4 to 5 minutes until the cheese is completely melted and bubbling. Rest for 3 minutes, garnish with minced chives, and serve warm.
