  • 1/2 cup shredded low-moisture whole-milk mozzarella cheese
  • 2 tablespoons finely chopped fresh flat-leaf parsley (optional garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) with the rack in the middle position. Lightly grease a 9×13-inch baking dish. Rinse the uncooked long-grain white rice in a fine-mesh sieve under cold running water until the water runs mostly clear, then drain thoroughly.
  2. Heat 1 tablespoon olive oil and 2 tablespoons unsalted butter in a 12-inch skillet over medium-high heat. Add the sliced cremini mushrooms and sear undisturbed for 3 to 4 minutes until golden on the bottom. Stir and cook 3 to 4 minutes longer until moisture evaporates and mushrooms are browned. Reduce heat to medium, add the diced yellow onion, kosher salt, black pepper, and smoked paprika, cooking for 4 to 5 minutes until soft. Stir in the garlic and thyme, cooking for 60 seconds until fragrant.
  3. Add the rinsed and drained rice to the skillet, stirring continuously for 90 seconds to toast the grains. Pour in the warm beef broth and heavy cream, scraping up any browned bits from the pan bottom. Bring to a simmer around the edges, then remove from heat.
  4. Pour the rice, mushroom, and broth mixture into the prepared 9×13-inch baking dish. Stir in 1/2 cup of shredded sharp white cheddar cheese. Arrange the thawed meatballs across the pan, pressing them halfway into the rice layer. Cover tightly with heavy-duty aluminum foil, crimping the edges to seal completely, and bake at 375°F (190°C) for 30 minutes.
  5. Remove the foil and check that the liquid is absorbed and the rice is tender. Sprinkle the remaining 1 cup of sharp white cheddar and 1/2 cup of shredded mozzarella evenly over the top. Return uncovered to the oven for 10 to 12 minutes until the cheese is melted and bubbling with light golden patches. Rest for 10 minutes before garnishing with fresh parsley and serving.
