- 4 large yellow onions (for stuffing)
- 1 pound ground beef
- 6 slices thick-cut bacon (cooked until crisp)
- 1 medium yellow onion (diced)
- 2 cloves garlic (minced)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded sharp cheddar cheese (divided)
- 2 tablespoons fresh parsley (for garnish)
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F. Hollow out 4 large onions, reserving the flesh.
- Cook 6 bacon slices until crisp, then sauté diced onion and garlic in the fat.
- Brown 1 lb ground beef with the aromatics and reserved onion flesh; season.
- Mix half the cheese into the beef, stuff the onions, top with remaining cheese and bacon.
- Bake for 35-45 minutes until onions are tender and cheese is bubbly; garnish with parsley.
