  • ½ pound ground pork
  • ¾ cup plain dried breadcrumbs
  • ½ cup whole milk
  • 1 large egg (beaten)
  • 1 medium yellow onion (finely diced)
  • 8 ounces cremini or white button mushrooms (finely chopped)
  • 3 cloves garlic (minced)
  • 1 cup sharp cheddar cheese (shredded, divided)
  • 6 strips bacon (cooked crisp and crumbled)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley (chopped)
  • 3 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups beef broth
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Preheat oven to 350°F. Soak breadcrumbs in milk. Sauté mushrooms, onion, and garlic until golden and dry.
  2. Mix beef, pork, soaked breadcrumbs, egg, vegetable mixture, ½ cup cheese, bacon, thyme, salt, pepper, and parsley. Pack into a lined loaf pan.
  3. Bake for 50-60 minutes until internal temperature reaches 160°F.
  4. Rest loaf for 10 minutes. Meanwhile, make gravy by melting butter, whisking in flour and garlic, then slowly adding broth and simmering until thickened.
  5. Slice loaf and serve topped with remaining cheese and warm gravy.
