- 12 pieces corn tortillas (6-inch size)
- 3 cups shredded Monterey Jack cheese
- 1 cup diced tomatoes (drained)
- 1/4 cup fresh parsley leaves (chopped)
- 1 cup red enchilada sauce
- 2 tablespoons unsalted butter
- 1 teaspoon ground cumin

Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter.
- Warm corn tortillas in the microwave or skillet until pliable to prevent cracking.
- Mix shredded cheese, diced tomatoes, parsley, cumin, salt, and pepper in a bowl.
- Fill each tortilla with 1/3 cup of the mixture, roll tightly, and place seam-side down in the dish.
- Pour enchilada sauce over the top, cover with foil, and bake for 20 minutes.
- Remove foil and bake uncovered for 5-10 minutes until bubbly, then rest for 5 minutes before serving.
