- 1 package frozen puff pastry (17.3 oz / 490g, thawed)
- 1 wheel brie cheese (8 oz / 225g, rind removed)
- 1 cup candied cranberries (150g)
- 1/2 cup pecans (60g, roughly chopped)
- 1 tablespoon fresh thyme leaves (finely chopped)
- 1 large egg (beaten with 1 teaspoon water)
- 1 pinch flaky sea salt
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut a 9-inch circle from the center of the thawed puff pastry to form a ring. Transfer to the baking sheet and prick the bottom with a fork.
- Mix the peeled brie, cranberries, pecans, and thyme in a bowl. Spread evenly over the pastry ring, leaving a border.
- Brush the pastry edges with egg wash and sprinkle with sea salt.
- Bake for 20-25 minutes until golden brown and bubbly. Cool for 5-10 minutes before slicing.
