Ingredients

  • 1.5 pounds chuck roast, cut into 1-inch cubes
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 4 medium carrots, peeled and cut into 1-inch chunks
  • 1.5 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 4 cups beef broth, preferably low-sodium
  • 2 tablespoons tomato paste
  • 2 sprigs fresh thyme or 1 teaspoon dried thyme
  • 2 leaves bay leaves
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons vegetable oil or canola oil

Instructions

  1. Sear the beef in batches in hot oil until deeply browned on all sides, then set aside.
  2. Sauté onions and garlic in the same pot until soft and fragrant.
  3. Stir in tomato paste, deglaze with broth, and return beef to the pot.
  4. Add remaining broth, carrots, potatoes, and herbs; cover and simmer on low for 1 hour 15 minutes.
  5. Check for tenderness, adjust seasoning, and remove bay leaves and thyme stems before serving.
