- 2 pounds ground beef (80/20 blend)
- 6 strips bacon (cooked crisp and crumbled)
- 1 cup sharp cheddar cheese (shredded)
- 1 cup plain dried breadcrumbs
- 1/2 cup whole milk
- 2 large eggs (beaten)
- 1 medium yellow onion (finely diced)
- 3 cloves garlic (minced)
- 3/4 cup barbecue sauce (divided)
- 1/4 cup ketchup
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with foil.
- Cook bacon until crisp, crumble, and set aside half for the mix.
- Sauté diced onion and minced garlic until soft; let cool.
- Mix beef, bacon, cheese, breadcrumbs soaked in milk, aromatics, eggs, ketchup, mustard, Worcestershire, salt, pepper, and half the BBQ sauce.
- Shape mixture in pan, top with remaining BBQ sauce and bacon bits.
- Bake for 55-65 minutes until internal temperature reaches 160°F.
- Rest for 10-15 minutes before slicing.
