Baked Salmon with Spinach and Cheese

  • Author: Sofia
  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Description

A comforting, nutrient-dense dinner that balances the rich, buttery texture of salmon with the earthy freshness of wilted spinach and a savory, melted cheese crust.

Ingredients

Scale
  • 4 fillets Salmon Fillets, skin-on or skinless, patted dry (about 6 ounces each)
  • 10 ounces Fresh Spinach, roughly chopped
  • 2 cloves Garlic, minced finely
  • 2 tablespoons Olive Oil, divided use
  • 1 cup Shredded Cheddar Cheese (shredded from a block)
  • ½ cup Shredded Mozzarella Cheese (shredded)
  • 1 tablespoon Lemon Juice, fresh squeezed
  • 1 teaspoon Dried Oregano
  • ½ teaspoon Salt (or to taste)
  • ¼ teaspoon Black Pepper (freshly ground)
  • 1 tablespoon Butter, unsalted, melted (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet or shallow glass baking dish with parchment paper or lightly grease it with non-stick spray.
  2. In a medium skillet over medium heat, warm 1 tablespoon of olive oil, add the minced garlic and sauté for about 30 seconds until fragrant, then toss in the chopped spinach and dried oregano.
  3. Cook the spinach mixture, stirring frequently, just until wilted completely and reduced in volume, which should take about 2 to 3 minutes, then remove from heat and stir in the lemon juice, salt, pepper, and melted butter if using.
  4. Place the salmon fillets on the prepared baking sheet skin-side down, divide the spinach mixture evenly among the four fillets spreading it into an even layer over the top, and sprinkle the shredded cheddar and mozzarella cheese generously over the spinach layer.
  5. Transfer the baking sheet to the center rack of the preheated oven and bake for 12 to 15 minutes until the fish flakes easily with a fork, reaches an internal temperature of 145°F (63°C), and the cheese is fully melted with spots of light golden brown.
  6. Remove the dish from the oven and let the salmon rest for 3 to 5 minutes before garnishing with fresh parsley or lemon wedges and serving warm.

Keywords: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in a toaster oven or conventional oven at 350°F (175°C) for about 10 minutes to maintain texture. The uncooked assembled dish can be frozen for up to 2 months and thawed overnight in the refrigerator before baking, adding 10 to 15 minutes to the cooking time if baking from frozen. If the cheese browns too quickly, cover loosely with aluminum foil; if pale, broil for the final 1 to 2 minutes while watching closely.
