- 1 pound elbow macaroni
- 4 tablespoons unsalted butter (for the roux)
- 1/3 cup all-purpose flour
- 4 cups whole milk
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 4 cups shredded sharp cheddar cheese
- 1 cup shredded Gruyère cheese
- 1/2 cup panko breadcrumbs
- 2 tablespoons melted butter (for topping)
Instructions
- Preheat oven to 375°F (190°C). Boil macaroni until al dente, drain, and set aside.
- Melt 4 tbsp butter in a pot, whisk in flour to make a roux, and cook for 2 minutes.
- Slowly whisk in milk, mustard, spices, and salt. Simmer until thickened.
- Remove from heat and stir in cheddar and Gruyère until smooth.
- Combine sauce with pasta, pour into baking dish, and top with buttered panko.
- Bake for 25-30 minutes until golden and bubbly. Rest for 10 minutes before serving.
