Instructions
- Preheat oven to 350°F (175°C) and grease mini muffin pan.

- In another bowl, mix flour, baking soda, baking powder, and salt; gradually add to wet ingredients.
- In a saucepan over medium heat, combine diced apples with water, granulated sugar, cornstarch, lemon juice, and cinnamon. Cook until thickened.
- Fill muffin cups halfway with cookie dough; add apple filling; cover with more dough.
- Bake for about 15 minutes until golden brown. Cool before removing from the pan.
