Ingredients

Scale
  • 1 cup creamy peanut butter (standard commercial variety)
  • 3 tablespoons unsalted butter (softened to room temperature)
  • 1.5 cups confectioners’ sugar (sifted)
  • 1 cup crispy rice cereal
  • 8 ounces semisweet chocolate chips (about 1 1/3 cups)
  • 1 tablespoon coconut oil (or vegetable shortening)
  • 0.5 cup unsalted butter (softened to room temperature)
  • 0.5 cup creamy peanut butter
  • 0.5 cup granulated white sugar
  • 0.5 cup packed light brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1.25 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon fine sea salt
  • 1 cup milk chocolate M&M candies (divided (3/4 cup for dough, 1/4 cup for tops))

Instructions

  1. In a medium mixing bowl, beat the peanut butter and softened butter together until completely smooth.
  2. Gradually stir in the sifted confectioners’ sugar until a workable dough forms, then fold in the crispy rice cereal.
  3. Roll the mixture into 1-inch balls and arrange them on a baking sheet lined with parchment paper. Chill for 20 minutes.
  4. Combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave until melted and glossy.
  5. Dip each chilled peanut butter ball into the melted chocolate, tap off the excess, and return to the parchment sheet. Refrigerate until the chocolate hardens.
  6. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  7. In a large bowl, beat the softened butter, peanut butter, granulated sugar, and brown sugar until creamy.
  8. Add the egg and vanilla extract, beating until fully incorporated.
  9. Add the flour, baking soda, and salt. Mix until just combined, then fold in 3/4 cup of the candy pieces.
  10. Drop 1.5-tablespoon portions of dough onto the prepared baking sheets, pressing the remaining candies onto the tops.
  11. Bake for 9 to 11 minutes until the edges are lightly golden.
