Ingredients

  • 1 cup full-fat canned coconut milk (shaken well)
  • 1/2 cup plain Greek yogurt or coconut yogurt (for extra thickness)
  • 1 tablespoon honey or maple syrup (optional, depending on berry sweetness)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup ice cubes
  • 2 tablespoons shredded unsweetened coconut (for garnish)
  • 1 1/2 cups fresh strawberries (hulled and halved)
  • 1 cup coconut water
  • 1/2 cup coconut cream (the thick part from the top of a can of coconut milk)
  • 1/4 cup plain kefir or yogurt
  • 1 teaspoon agave nectar or sugar
  • 1/2 cup crushed ice
  • sliced strawberries (for garnish)
  • 1 cup frozen mango chunks
  • 1/2 cup fresh pineapple chunks
  • 1/2 cup orange juice (chilled)
  • 1/4 cup coconut milk or heavy cream
  • 1/2 teaspoon lime juice
  • 1/4 cup ice cubes
  • pineapple wedge and cherry (for garnish)
  • 1 cup pitted black cherries (fresh or frozen)
  • 1 cup whole milk or almond milk
  • 1/4 cup vanilla ice cream or vanilla bean yogurt
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon brown sugar or honey
  • 1/2 cup ice cubes
  • fresh mint sprig (for garnish)

Instructions

  1. Add the blueberries, coconut milk, yogurt, honey, and vanilla extract to a high-speed blender; pulse briefly to break up berries before blending on high speed for 45 to 60 seconds until completely smooth; add ice cubes and blend again for another 20 to 30 seconds until desired consistency is reached; pour immediately into two tall glasses filled with fresh ice if serving over ice, or serve straight if preferred chilled; garnish each glass with a sprinkle of shredded coconut and a few fresh blueberries on top.
  2. Rinse the strawberries thoroughly and remove the green stems before cutting them in half; combine the strawberry halves, coconut water, coconut cream, yogurt, and sweetener in a blender; secure the lid tightly and blend on medium-high speed for about 30 seconds; check the consistency; if it is too thin, add the crushed ice and blend for another 15 seconds; pour the mixture into chilled glasses, ensuring any foam created during blending goes into the glass; top with fresh sliced strawberries and serve immediately while cold.
  3. Place the frozen mango, fresh pineapple, orange juice, coconut milk, and lime juice into the blender pitcher; start blending on low speed to break down the larger fruit pieces before increasing to high; blend for 40 to 50 seconds until the mixture is uniform and creamy; add the ice cubes and pulse the blender three or four times to incorporate the ice without turning the drink watery; pour the mixture into a hurricane glass or a large tumbler; garnish with a pineapple wedge on the rim and a maraschino cherry dropped into the center.

Wash the cherries thoroughly and remove all pits; if using frozen cherries, let them thaw slightly for easier blending; add the cherries, milk, vanilla ice cream, vanilla extract, and brown sugar to the blender; blend on medium speed for 30 seconds to combine the ingredients; add the ice cubes and blend on high speed for 20 to 30 seconds until the drink is frothy and cold; pour the mixture into two glasses, dividing the liquid evenly between them; garnish with a fresh mint sprig and a few whole cherries placed on the side of the glass.
