- 2 medium apples (peeled and diced into small cubes)
- 1 tablespoon unsalted butter
- 1 teaspoon ground cinnamon
- 1 tablespoon brown sugar
- 1/4 cup all-purpose flour
- 2 tablespoons cold butter (cubed)
- 2 tablespoons brown sugar
- 1/2 teaspoon vanilla extract
- 1 cup vanilla ice cream or vanilla custard
Instructions
- Mix crushed cookies with melted butter; press half into the bottom of two tall glasses. Beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Spoon half the cream over the crust, drizzle with 2 tablespoons caramel, add remaining cookie crumbs, top with rest of cream and caramel, and garnish with chocolate shavings. Refrigerate for at least 30 minutes before serving.
- Mix graham cracker crumbs, granulated sugar, and melted butter; press firmly into four mason jars or glasses and refrigerate. Beat cream cheese and powdered sugar until smooth, add lemon zest. Whip heavy cream to soft peaks and fold into cream cheese mixture. Drizzle in melted white chocolate and fold gently. Spoon half the mixture into glasses, add a layer of raspberries, cover with remaining mixture, and top with remaining raspberries and white chocolate. Chill for at least 2 hours to set.
- Toast shredded coconut and sliced almonds in a dry skillet over medium heat for 2-3 minutes until golden brown, then cool completely. Prepare vanilla pudding according to package directions and chill, or use thick cold yogurt. Layer pudding/yogurt, toasted coconut/almonds, dark chocolate chunks, and chocolate syrup in a glass. Repeat layers, ending with toppings. Garnish with whole almonds and extra syrup. Serve immediately or refrigerate for up to 1 hour.
- Melt 1 tablespoon butter in a skillet over medium heat; cook diced apples, cinnamon, and 1 tablespoon brown sugar for 5-7 minutes until tender, then cool. Mix flour, 2 tablespoons brown sugar, and cold cubed butter to create coarse crumbs. Layer cooled spiced apples and vanilla ice cream/custard in a glass, repeating layers. Sprinkle crumble topping generously over the final layer. Drizzle with vanilla extract if desired. Serve immediately to keep crumble crunchy.
