- 1 heaping cup fresh basil, chopped
- 2/3 cup feta cheese
- 2 cups arugula
- 1/2 large red onion, thinly sliced
- 1/4 cup pine nuts
- 1/4 cup olive oil
- 2 Tbsp. red apple vinegar
- 2 Tbsp. lemon juice, freshly squeezed
- 1–2 Tbsp. honey
- 1 Tbsp. Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine watermelon, arugula, basil, feta cheese, red onion, and pine nuts. Toss gently to mix.
- For the dressing, mix olive oil, red apple vinegar, lemon juice, honey, Dijon mustard, salt, and pepper in a sealed jar or whisk in a bowl until well combined.
- Drizzle the dressing over the salad and toss gently to coat everything evenly.
- Serve immediately or chill for about an hour before serving.
