- 3 tablespoons fish sauce
- 1 tablespoon sugar
- 2 tablespoons lime juice (freshly squeezed)
- 1/4 cup warm water
- 1 garlic clove (minced)
- 1–2 small red chilies (finely chopped, optional)
- 1 tablespoon rice vinegar (optional for extra tang)
- 2 tablespoons fresh parsley (finely chopped)
Instructions
- In a bowl, mix rice flour, all-purpose flour, baking powder, salt, and black pepper.
- In another bowl, whisk cold water and egg until smooth; combine with dry ingredients.
- Fold in chopped shrimp and herbs until evenly coated.
- Heat vegetable oil in a frying pan to 350°F (175°C).
- Drop spoonfuls of batter into the hot oil; fry until golden brown (3–5 minutes).
- For the dipping sauce: mix fish sauce, sugar, lime juice, minced garlic, warm water, and optional chilies.
- Serve fritters hot with dipping sauce.
