  • 1 tablespoon sugar
  • 2 tablespoons lime juice (freshly squeezed)
  • 1/4 cup warm water
  • 1 garlic clove (minced)
  • 12 small red chilies (finely chopped, optional)
  • 1 tablespoon rice vinegar (optional for extra tang)
  • 2 tablespoons fresh parsley (finely chopped)

Instructions

  1. In a bowl, mix rice flour, all-purpose flour, baking powder, salt, and black pepper.
  2. In another bowl, whisk cold water and egg until smooth; combine with dry ingredients.
  3. Fold in chopped shrimp and herbs until evenly coated.
  4. Heat vegetable oil in a frying pan to 350°F (175°C).
  5. Drop spoonfuls of batter into the hot oil; fry until golden brown (3–5 minutes).
  6. For the dipping sauce: mix fish sauce, sugar, lime juice, minced garlic, warm water, and optional chilies.
  7. Serve fritters hot with dipping sauce.
