  • ⅓ cup white apple vinegar
  • 2 cups chopped kale (stems removed)
  • 2 ½ to 4 cups vegetable or chicken broth

  • Red pepper flakes (optional)
  • Italian seasoning
  • Bay leaves
  • Dried thyme
  • Dried oregano

Instructions

  1. In a large pot or Dutch oven over medium heat, sauté olive oil with onion until golden brown (about 5 minutes). Add garlic, celery, and carrots; continue to sauté for another 10 minutes.
  2. Deglaze the pot with white apple vinegar and let it evaporate for about 5-7 minutes.
  3. Stir in cannellini beans, tomato paste, seasonings (salt, pepper, red pepper flakes if using), bay leaves, thyme, oregano, and start with 2 ½ cups of broth.
  4. Bring to a boil then reduce heat to simmer for about 15 minutes.
  5. Remove bay leaves; blend about half of the soup until smooth and mix back into the pot. Adjust broth for desired consistency.
  6. Stir in kale and simmer until wilted; taste to adjust seasonings as needed.
  7. Serve warm with fresh bread or toppings as desired.
