  • 1 cup fresh blueberries
  • 1 cup cooked quinoa
  • 1/3 cup crumbled feta cheese
  • 1/3 cup sliced almonds (toasted)
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey (or maple syrup)
  • 1 small clove garlic, minced

  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Massage chopped kale in a large bowl with olive oil and salt for 2–3 minutes until tender.
  2. In a small bowl, whisk together dressing ingredients until emulsified.
  3. Add cooked quinoa to the massaged kale along with half the dressing; toss well.
  4. Fold in sliced peaches, blueberries, red onion, and mint leaves gently.
  5. Top with crumbled feta cheese and toasted almonds.
  6. Drizzle remaining dressing before serving.
