  • 2 tablespoons fresh lemon juice

  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt

  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a large bowl, massage the chopped kale with olive oil and salt for 2-3 minutes until tender.

  3. Add cooked quinoa to the massaged kale along with half of the dressing and toss well.
