- 1 bell pepper, sliced
- 1 onion, sliced
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- Fresh parsley for garnish
Instructions
- Marinate the flank steak by mixing olive oil, chili powder, cumin, salt, and pepper in a bowl. Rub the mixture over the steak and let it marinate for at least 30 minutes.
- Heat a skillet over medium-high heat and cook the marinated steak for about 5-7 minutes on each side until desired doneness. Remove from heat and let rest.
- In the same skillet, sauté sliced bell peppers and onions until soft but still crisp (about 5 minutes). Remove from heat.
- Slice the cooked steak into thin strips. On half of each tortilla, layer cheese, sautéed vegetables, and steak strips. Fold the tortilla in half.
- Cook each folded quesadilla in the skillet over medium heat for about 2-3 minutes on each side until golden brown and cheese melts. Cut into wedges before serving.
