  • 3 roma tomatoes (diced)
  • 1 teaspoon paprika
  • Pinch of saffron threads
  • 4 boneless skinless chicken thighs
  • 2 cups Spanish rice
  • 5 cups chicken broth
  • 1/2 lb jumbo shrimp
  • 1/2 lb mussels
  • 8 oz calamari rings
  • Fresh parsley and lemon (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion, bell pepper, and garlic; cook until translucent.
  2. Stir in diced tomatoes, bay leaf, paprika, saffron, salt, and pepper. Cook for about 5 minutes.
  3. Add chicken pieces to the pot along with rice; stir for about a minute.
  4. Gradually pour in chicken broth without stirring. Shake the pan gently to distribute rice evenly.
  5. Bring to a boil, then reduce heat to medium-low. Cook uncovered for about 15–18 minutes.
  6. Add shrimp, mussels, calamari, and peas on top; cook for another 5 minutes without stirring.
  7. Remove from heat and cover for about 10 minutes before serving. Garnish with parsley and lemon slices.
