- 1 cup unsalted butter (226g), softened
- 1 cup granulated sugar (200g)
- 2/3 cup light brown sugar (135g), packed
- 2 large eggs
- 1 and 1/2 teaspoons vanilla extract
- 12 soft caramels, halved
- Topping: 1/4 cup granulated sugar (50g) + 1 and 1/2 teaspoons ground cinnamon
Instructions
- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, cream of tartar, and salt.
- In a separate bowl, beat softened butter until creamy; add sugars and beat until fluffy. Mix in eggs and vanilla.
- Gradually incorporate dry ingredients into wet ingredients until just combined. Chill dough for at least one hour.
- Scoop dough, press a caramel half into it, cover with more dough to seal it in, then roll in cinnamon-sugar mixture.
- Bake for 11–13 minutes until edges are slightly golden; let cool on sheets before transferring to racks.
